Cowgirl co-founder Sue Conley suggests a dark or spicy beer with the cheese, noting it is harder to pair with wine (<a href=\"http:\/\/appellationbeer.com\/blog\/beer-a-better-match-for-cheese\/\">no surprise<\/a>).
