I added a few details at <a href=\"http:\/\/beertravelers.com\/postcards\/2007\/08\/24\/so-long-copa-too\/\">Beer Travelers<\/a>, but since we seem to have slipped into beer-and-food mode here I&#8217;ll use the news as an excuse to post another recipe (a dessert, of course).<\/p>\n<p>Tom Peters managed some extraordinary beer dinners almost every month before leaving Copa to start Monk&#8217;s Cafe. The recipe comes from one in July of 1994 when the theme was &#8220;Tom&#8217;s Favorite Beers.&#8221; The full menu follows.<\/p>\n<p>Peters started hosting beer dinners in 1994, and began serving dishes prepared with beer by the third one. In the beginning most of those who showed up were homebrewers, but soon there were lawyers, stockbrokers, art students, just about anybody.<\/p>\n<p>It was always a hands-on event for Peters, starting at 4 a.m. with a visit to local markets. Grouper might have been on the menu when he laid out the menu but if the rainbow trout looked better that&#8217;s what ended up on the plates. Although he wasn&#8217;t a regular in the Copa kitchen, on beer dinner days you&#8217;d hardly find him anyplace else.<\/p>\n<p>So here you go . . . <\/p>\n<p><strong>Angel Food Cake<\/strong><br \/>\n<em>w\/ framboise-scented cream anglaise<\/em><\/p>\n<p><strong>Cake<\/strong><br \/>\nPreheat oven to 350 degrees<\/p>\n<p>10\tegg whites, room temperature (save yolks)<br \/>\n1\u00bc t.\tcream of tartar<br \/>\n1\/4 t.\tsalt<br \/>\n1 t.\tvanilla extract<br \/>\n1\/2 t.\talmond extract<br \/>\n1\u00bc cups\tsugar<br \/>\n1 cup\tcake flour<br \/>\n1 cup\tfresh raspberries &#8211; optional<\/p>\n<p>Beat egg whites, cream of tartar and salt with a whisk or an electric mixer until soft peaks form.<br \/>\nAdd vanilla and almond extracts and blend.<br \/>\nAdd sugar and beat until egg whites are stiff and shiny (do not let them dry out).<br \/>\nSift flour into stiff egg whites. Add flour in three steps and fold in carefully. Do not break the egg whites. Fold in raspberries, if desired.<\/p>\n<p>Spoon mixture into ungreased nonstick tube pan.<br \/>\nBake for 40 minutes, until toothpick comes out clean.<br \/>\nInvert pan onto a cake rack and let cool in pan.<br \/>\nWhen completely cool, carefully run knife around outer and inner edges and invert pan, gently shaking until cake slides out.<\/p>\n<p><strong>Cream Anglaise<\/strong><br \/>\n2 cups\tmilk<br \/>\n2 cups\theavy cream<br \/>\n1 cup\tgranulated sugar<br \/>\n1\tvanilla bean<br \/>\n10\tegg yolks<br \/>\n1\/4 cup\tBoon Framboise<\/p>\n<p>Heat milk, cream and sugar in a heavy saucepan.<br \/>\nSplit vanilla bean lengthwise and heat with cream until mixture begins to boil. Remove from heat.<br \/>\nWhip egg yolks in bowl and gradually add hot cream very slowly, whisking continuously. When half of the cream has been added, pour yolk mixture into pan containing remaining cream.<br \/>\nReturn to stove and cook over very low heat until custard thickens enough to coat the back of a spoon.<br \/>\nRemove vanilla bean and scrape seeds into custard.<br \/>\nPlace in food processor or blender and process until absolutely smooth.<br \/>\nGently fold in Boon Framboise.<br \/>\nRefrigerate until well chilled.<\/p>\n<p><strong>Presentation:<\/strong><br \/>\n1 ounce ladle of creme anglaise.<br \/>\nSlice of angel food cake<br \/>\nSprinkle with fresh raspberries.<\/p>\n<p><em>Copyright Tom Peters<\/em><\/p>\n<p><strong>THE MENU<\/strong><\/p>\n<p><strong>Pre-dinner beer<\/strong><br \/>\nDock Street Frambozen.<\/p>\n<p><strong>Appetizer<\/strong><br \/>\nSee Scallops on Spicy Black Bean Cake. Served with Corsendonk Brown Ale.<\/p>\n<p><strong>Entree<\/strong><br \/>\nChicken Breast with Rosemary, Garlic &#038; Lemon<br \/>\nor<br \/>\nGrilled Salmon with Watercrss, Ginger &#038; Sesame<br \/>\nServed with Chimay Grande Reserve and Sierra Nevada Pale Ale<\/p>\n<p><strong>Dessert<\/strong><br \/>\nAngel Food Cake with Framboise Scented Creme Anglaise.
