{"id":15971,"date":"2020-07-22T09:15:26","date_gmt":"2020-07-22T15:15:26","guid":{"rendered":"http:\/\/appellationbeer.com\/blog\/?p=15971"},"modified":"2020-07-22T09:15:26","modified_gmt":"2020-07-22T15:15:26","slug":"quality-of-bitterness-as-easy-as-abc","status":"publish","type":"post","link":"https:\/\/appellationbeer.com\/blog\/quality-of-bitterness-as-easy-as-abc\/","title":{"rendered":"Quality of bitterness: as easy as ABC?"},"content":{"rendered":"<p>Agreeing on a definition for \u201cquality of bitterness\u201d is almost as hard as agreeing on a <a href=\"https:\/\/kfi.jpm.mybluehost.me\/blog\/undefinable-hopelessly-misunderstood-and-absolutely-essential\/\">definition of \u201ccraft beer.\u201d<\/a> But understanding quality of bitterness is essential, and a reason why I like the way <a href=\"http:\/\/appellationbeer.com\/blog\/lets-talk-goryczka-bitterness\/\">Polish homebrewers tweaked their scoresheet<\/a> for their competitions, awarding six points for bitterness.<\/p>\n<p>The International Bitterness Unit formula was established in the 1960s at a time the composition of hop cones was different than today. And because isomerized alpha acids are primarily responsible for the bitterness in beer, \u201cmany brewers consider iso-a-acids to be the only relevant bitter compounds in beer.\u201d Scientists in Germany believe otherwise, maintaining that the majority of what they call \u201cauxiliary bitter compounds\u201d are desirable from a sensory perspective. Sensory panels reported that the harmonious aspect of bitterness increased with the quantity of ABC.<sup>1<\/sup><\/p>\n<p>Basically, \u201cauxiliary bitter compounds\u201d encompass all bitter compounds in hop resins which are transferred into beer and which are not iso-alpha acids. Few of the 8,000-plus brewers in the United States have the equipment needed to measure ABC. <\/p>\n<p>If a brewer does not have that equipment what should they do? A few rules of thumb:<br \/>\n<!--more--><\/p>\n<p>&#8211; High alpha varieties, particularly those with a low percentage of beta acids, will contribute little ABC.<br \/>\n&#8211; Short boiling times increase the concentration of ABC, because fewer alpha acids are isomerized.<br \/>\n&#8211; Late hop additions increase the concentration. Same reason.<br \/>\n&#8211; Dry hopping increases the concentration. Ditto.<br \/>\n&#8211; No surprise, quantity increases the concentration.<br \/>\n&#8211; Using hops with a high beta to alpha ratio increases concentrations. This is the flipside of the first item on this list. It is common to take a look at the alpha\/beta ratio in a variety, but consider the beta\/alpha instead.<\/p>\n<p>The hops with the highest beta\/alpha ratio (from 1.3:1 to 2.4:1) are all landrace varieties \u2014 found growing in the wild, sometimes centuries ago, and chosen for their brewing qualities \u2014 such as Saaz, Mittelfr\u00fch, and Strisselspalt.<\/p>\n<p>In contrast, starting with Brewer\u2019s Gold, New World varieties have been bred to produce more alpha. Some examples (ratios will vary by lot):<\/p>\n<p>&#8211; Cascade 1:1.2<br \/>\n&#8211; Centennial 1:2<br \/>\n&#8211; Citra 1:3.25<br \/>\n&#8211; Mosaic 1:3.4<br \/>\n&#8211; El Dorado 1:2.8<br \/>\n&#8211; Sabro 1:2.8<br \/>\n&#8211; Idaho 7 1:2.8<br \/>\n&#8211; Nelson Sauvin 1:2<br \/>\n&#8211; Galaxy 1:2.3<\/p>\n<p><sup>1<\/sup> A.
