The point is they are searching.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/appellationbeer.com\/images\/20170309-flavormap.jpg\" width=\"350\" height=\"265\" alt=\"Flavor Map\" class=\"alignleft size-full\" \/>They might be better off forking over $16 (plus shipping) to buy their own <a href=\"http:\/\/www.mbaa.com\/store\/Pages\/FLAVORMAP.aspx\">Beer Flavor Map<\/a>. You can <a href=\"https:\/\/www.craftbeer.com\/editors-picks\/beer-flavor-map-revolutionizes-beer-terminology\">read more about it here<\/a>. It works like this: flavor is broken into three color-coded categories \u2014 Taste, Aroma and Mouthfeel. Within each there are sub-categories, so under Spicy you will find licorice, clove, cinnamon, etc.<br \/>\n<!--more--><\/p>\n<p>Not many of the flavors featured in a book that recently showed up at our local library &#8212; <a target=\"_blank\" href=\"https:\/\/www.amazon.com\/gp\/product\/1476753954\/ref=as_li_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=1476753954&#038;linkCode=as2&#038;tag=beertravelers&#038;linkId=5945aea86ab0866ac8e18df96d12f659\"><em>Eight Flavors: The Untold Story of American Cuisine<\/a><\/em><img loading=\"lazy\" decoding=\"async\" src=\"\/\/ir-na.amazon-adsystem.com\/e\/ir?t=beertravelers&#038;l=am2&#038;o=1&#038;a=1476753954\" width=\"1\" height=\"1\" border=\"0\" alt=\"\" style=\"border:none !important; margin:0px !important;\" \/>&#8212; are on that map, but maybe they should, or will, be.<\/p>\n<p>Real quickly, author Sarah Lohman &#8212; an <em>historical gastronomist <\/em> &#8212; uses the history and stories behind eight ingredients to describe American cuisine. I don&#8217;t think I am spoiling much by listing them: black pepper, vanilla, chili powder, curry powder, soy sauce, garlic, monosodium glutamate (MSG), and sriracha.<\/p>\n<p>In the epilogue she describes an important ninth flavor: <em>new.<\/em> She writes, &#8220;The American kitchen is not static; it&#8217;s cumulative, and it evolves. Ten years ago, I had not heard of Sriracha, and now it is in every refrigerator I open (at least, those stocked by millennials). And in the next decade, or the next century, our cuisine will continue to change. Which means a new flavor will earn a permanent place in Americans&#8217; hearts and stomachs.&#8221; And she proceeds to examine candidates for the next new flavor.<\/p>\n<p>Drinkers, brewers, trendspotters are trying to do the same with beer. Maybe there is a <em>Seven Flavors of Beer<\/em> (or eight or four or whatever) in the works.
