I bet the TTB has an actual definition. Beyond that is the aesthetic. I'm not sure if Phil Markowski at Southampton Publick House is still making a beer using Long Island chardonnay grapes, but as a recall Roger Protz didn't give it all that friendly a review at All About Beer magazine.
