It’s CRUCIAL that every single part of the brewing process be done by hand, especially the stirring of the hot wort — with your hands, please, wooden paddles are for sissies — and the cleaning with caustic (only pussies use rubber gloves). And unless your steam plant is heated with wood you cut yourself, I don’t want your shitty-assed so-called ‘beer.’ I can’t believe all of you knuckled under to automation: computers kill beer. That’s a fact, you can look it up in Wikipedia.

Even the most automated brewing session had to have began on a simple pilot brewing system, similar to the ones homebrewers use (the lucky ones). This is where all the kinks were worked out of the ingredients and processes with countless batches. So, the fact that the beer is now made with full automation is neither here nor there. It all starts with the basics.

Some of the best beer I’ve had in Franconia was brewed on a space age computer-controlled brewery. A tiny one, admittedly, but achingly modern.
