Some never did quit. Samuel Smith in England put their Old Brewery Bitter in wooden casks. There are a few other breweries that do the same. Google "Society for Preservation of Beers from the Wood"

Thanks for the update, Eric.

I'm not qualified to comment on if the vats would be usuable, but I will guess they could be used again. Since they've been sitting dry it would take some coopering, and that you'd have to clean them with considerable care.

Also, it would take several brews on Bube's three-barrel system to fill a vat.

Would be fun, though, wouldn't it?

Stan,

You can still wander all around Bube's Brewery, including the basement where those wooden vats are located.

I visited Bube's for the first time a few months ago and loved it. It's full of history and has the best atmosphere of any drinking establishment I've ever been to. I'm hoping to get back there before next Friday so I can blog about it for The Session.

The wooden vats at Bube's haven't been used for many years. They are probably full of cobwebs and mildew. I wonder if they could be restored?
